Pioneering Yeast Research for Sherry Wines

GC Genomics partnered with Bodegas Lustau and the University of Cádiz to study the velo de flor—the unique yeast layer in sherry wine aging. We developed a custom genetic panel to explore its biodiversity and better understand how yeast influences the flavor, quality, and tradition of sherry wines. Read the article here.

We are opening a lab in Seville. We already have a new location. A little work and some paint and we will open our new laboratory. We’re still operating in Badajoz.
